Mateo Salcedo has spent the past decade turning Finca El Mirador into one of Huila’s more closely watched experimental farms, running controlled anaerobic and lactic fermentations alongside traditional washed lots. This Pink Bourbon lot uses a 72-hour anaerobic fermentation before washing.

Expect strawberry and cola notes over a distinct fermented complexity — a cup built for drinkers who already know they like Colombia’s more adventurous processing lots.

Producer

Mateo Salcedo took over his family's Huila farm in his twenties and has since become known locally for detailed fermentation-time logbooks kept on every lot.

Terroir

Huila's combination of high elevation, volcanic ash soils, and a bimodal harvest gives producers two shots a year at peak ripeness.
